Executive Chef Federico Comacchio specializes in transforming traditional elements of Italian cuisine into modern culinary masterpieces.
He sources only the freshest of ingredients and strives to source his products locally when possible. He uses only imported extra-virgin olive oil and Parmesan cheese along with fresh olives, sea salt, lemon zest and capers.
The steaks are not prepared with any seasonings – only olive oil, salt and pepper to preserve the true flavor of the steaks. Even the pasta is made on premise with Kamut flour – the most organic and ‘a la Mode’ wheat flour available.
